Cauliflower – tomato curry

Procedure – Heat the oil in a pan over medium heat.

Add the onion and cook until golden brown. Add the ginger garlic paste and stir until the raw smell of it is gone.

Add 1 large tomato – cut into pieces and cook, stirring, until it turns mushy. Add salt, turmeric powder, mirchi powder, coriander seeds powder according to taste preferences and 1/4th spoon garam masala. Cook, stirring, until the mixture darkens and oozes oil.

Add 2 cups water, the cauliflower and bring to a simmer, cover and cook until the cauliflower is almost soft.

Add coriander leaves as garnish and serve hot with either rice, chapati, pulka or naan.
